Rawon

Rawon, a beef stew hailing from East Java, is rich and intensely flavorful. "Keluak" nut gives it the dark color, while turmeric, galangal, bay leaves, kaffir lime leaves, and candle nut (to name a few) give it the cornucopia of flavors that compliment the beef and the broth. Rawon is usually served with rice, and garnished with fried shallots and short sprouts.
