The national dish of Indonesia, satay is marinated and skewered meat grilled over an open flame, served with peanut sauce.

Variations abound, on different islands of Indonesia and in other southeast Asian countries. Wikipedia lists over 30 for Indonesia alone.

Often satay is accompanied by rice cakes (ketupat) and cucumbers and onions. Other kinds of sauces are sometimes used in addition to or instead of the peanut sauce.

The yellow sauce is made with sweet soy sauce, palm sugar, fried shallots, shrimp paste, and kemiri (candle nuts).

Another kind of sauce is made with turmeric, coriander, and laos kering (galangal root).

Most popular peanut sauces are the Rotary brand and Karangsari brand.
